A Quick, Easy, Frozen Watermelon Drink (with or without rum)

This healthy frozen watermelon drink can be made with alcohol (rum, anyone?) for a great summer cocktail!

I cannot get enough of this amazing cocktail that I whipped up tonight. It’s easy, it’s delicious, and it’s pretty healthy! Well, until you add in the rum. šŸ˜‰ But come on. What could be more perfect on a steamy hot summer’s night? Frozen watermelon + ice + lime + rum for the grownups = heaven. My drink and smoothie experiments don’t always go over well around here, but my kids and Hubs loved this one. Hooray!

Extra bonus of this drink? We always have too much watermelon, and I hate it when it goes bad because we can’t get through it all. Now it’ll never have to. I’m always going to chop up half that big old melon and throw it in the freezer so I can whip up a batch of these drinks whenever the mood strikes. Which will be often!

Watermelon Slush

Makes 4 servings

4 cups of frozen, seedless watermelon cubes (if you want this NOW and your melon isn’t frozen, give it a go anyway. The texture will just be a little more watery.)
1 cup of water if using frozen watermelon, 1 cup ice if using fresh
2-3 tablespoons lime juice
1 scant tablespoon of sugar (not needed if your watermelon is super sweet!)
1 shot of rum per glass for the grown-ups
Fresh mint, for garnish

– Throw the watermelon, ice, lime juice, and (optional) sugar in a blender
– Blend it all up
– Pour into four glasses, such as stemless wine glasses
– Stir in rum, if desired
– Garnish with mint
– Kick back and cool down!
