No butter, no oil, healthy yummy pancakes. Yes, really.

I have never created my own recipe but today I was motived to try something new. The kids have a snow day and I wanted to make pancakes. But I wanted them to be healthy and not loaded with butter and/or oil.

So – voila! I have created my very first recipe, all by myself! Yes, I am very excited about this. And I’m even more excited that Anne declared them “THE BEST PANCAKES EVER!!!!”

These pancakes have no oil and no butter in them. They are thick and filling. And since they are not sweet, they are perfect for a good dousing of real maple syrup. I put blueberries in mine to naturally add sweetness, and I bet bananas would be equally as delicious!


Healthy Yummy Pancakes – No Oil, No Butter, and Totally Delicious

Whisk together in a big bowl:

1 cup white whole wheat flour

1/2 cup regular flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon wheat germ (optional – add more if you’d like or leave it out)

Then whisk together in a small bowl:

1 egg

1/2 cup natural, unsweetened applesauce

1/4 cup plain or vanilla yogurt (I use Chobani)

4 teaspoons sugar

1 1/2 cup skim milk (8/2013 note: I now use a bit more milk – just under 1 3/4 cup)

1/4 teaspoon vanilla (omit if you are using vanilla yogurt)

Add the wet ingredients to the dry ingredients and mix together until blended. The batter will be a little lumpy.

Heat a nonstick skillet to medium heat. Spray with cooking spray. Pour about 2 tablespoons of batter for each pancake. The pancakes will look thick – that is fine.

NOTE: Normally when making pancakes, you wait until you see little bubbles on the surface to flip them. These pancakes will not make lots of those bubbles – they are too thick. You may see a few, you may see none. Keep an eye on your pancakes and check them to figure out when to flip – mine took about three minutes to brown on one side, then three more on the other. The ones I added blueberries to took a little longer.

Because there is no butter or oil in these pancakes, I spritzed some more spray oil on the griddle to cook the other side of the pancake. So when your pancake is ready to flip, use your flat spatula to lift your pancake, spritz the griddle, then flip the pancake over.
